PRESSURE BREWING

How to Brew Espresso and Moka Pot Coffee at Home

Espresso and moka pot sit at the intense end of the coffee spectrum — concentrated, textured, bold, and deeply sensory.

Espresso

9 bars of pressure. Dense crema. Syrupy texture. Precision extraction where every second and every gram matters.

Moka Pot

The iconic stovetop brewer — intense, nostalgic, and beautifully simple. A ritual found across Italy and Latin America.

Espresso Fundamentals

True espresso pushes water through finely ground coffee at 9 bars of pressure, extracting compounds and emulsified oils no other method can replicate.

It is both the most rewarding and the most unforgiving brewing method at home.

Basic Espresso Recipe

Dose 18g
Yield 36g
Time 25–30s
Temp 92–94°C
Grind & Distribute Use a very fine grind and distribute evenly before tamping.
Tamp Press firmly and level for even extraction.
Extract Aim for a slow honey-like flow and stop at a 1:2 ratio.
“Pressure brewing amplifies everything — sweetness, texture, intensity, and flaws.”

The Moka Pot Ritual

The moka pot uses steam pressure to produce a concentrated stovetop coffee that sits somewhere between filter coffee and espresso.

Done correctly, it becomes rich, syrupy, chocolate-forward, and deeply comforting.

Basic Moka Pot Recipe

Step 1 Fill the base with hot water up to the safety valve.
Step 2 Fill the basket with medium-fine coffee. Never tamp.
Step 3 Use medium-low heat and wait for a gentle flow.
Step 4 Remove immediately once sputtering begins.

Choose the Right Coffee

Pressure brewing demands coffees with body, sweetness, and low acidity. Ritual’s Intense SCA 85+ was profiled specifically for espresso and moka pot extraction — dark chocolate, almond, malt sweetness, and a smooth concentrated finish.

WHAT IS SCA SCORE?

An SCA score is a 100-point quality rating for coffee, developed by the Specialty Coffee Association (SCA). Scores are assigned by certified Q Graders after a standardized tasting process called cupping. A score of 80 or higher qualifies a coffee as "specialty coffee," indicating exceptional quality and adherence to high standards.
